From fatty tuna to marinated lean tuna and negitoro tsutsumi, I was surprised at how colorful the same tuna could be.
I started with the fatty tuna, and it was very thick and luxurious.
The seared soy sauce chu-toro was incredibly juicy and melts-in-your-mouth delicious from the seared flesh.
The aroma of sesame on the marinated lean tuna was a nice accent, and I was astonished by the incredibly generous amount of fatty tuna in the negitoro tsutsumi.
Even just the lean tuna felt different than usual; I think it's a dish where you can taste the superb discernment of Komehiko.

It's an excellent combination with candied sweet potatoes and ice cream.

I only had an image of datemaki as "something I've heard of in New Year's osechi ryori," but I was surprised to see it presented as a dessert with ice cream.
The moist, gently sweet datemaki was perfectly complemented by the cold, refreshing matcha ice cream, making for an absolutely brilliant pairing.
I'll admit that whoever thought of eating datemaki and matcha ice cream together is a genius.
And as expected, Sushiro's candied sweet potatoes are crispy and delicious.
